It's Christmas Time! Bring Forth the Mexican Wedding Cookies


These little cookies are delicious and loved by nearly everyone! They are rich, delicate, and totally addictive.

Preheat oven to 300 degrees.

Combine:
2 sticks softened butter
2 T. sugar
1 T. vanilla

Whip with electric mixer. Add in:

2 cups flour (with mixer)

2 cups chopped pecans (use wooden spoon to mix in)

Then, roll small balls and put close together on ungreased cookie sheet. Bake for approximately 45 minutes.

Take out of the oven and let cool on newspaper. Then, toss in powered sugar. Let cool more, then roll again (2x in the powdered sugar).

  1. These just happen to be MY favorite holiday cookie. Check out Heidi Swansons blog...101 Cookbooks. She has a recipe for shortbread cookies w/ rye flour. I picked up some rye flour at Greenlife and am going to give them a try. I'll let you know how they turn out. I also love adding freshly ground white cardamom pods to the plain recipe.
